Target Audience: All levels - we will adjust our level of lessons to you.  Beginners to intermediate decorators seeking a personalized, high-end experience


Setting: Home kitchen with premium tools and ingredients


Objective: Create a stunning, professional-quality cakes while learning advanced techniques in a luxurious, hands-on setting

Course Overview

This exclusive, intimate class focuses on craftsmanship, creativity, and elegance.

 

With only one or two participants, the instructor can provide tailored guidance, ensuring a bespoke experience.

 

The course blends foundational skills with upscale techniques, using top-tier ingredients (e.g., Callebaut chocolate, Madagascar vanilla, edible gold leaf) and professional tools (e.g., airbrush kits, silicone molds).

 

The final product will be a multi-tiered or intricately decorated cake worthy of a high-end bakery display.

Course Schedule

1. Welcome & Introduction (15 minutes)

  • What’s Included: Gourmet coffee/tea, or sparkling juice, and a light artisanal snack (e.g., macarons or truffles).

  • Activities:

    • Meet the instructor and discuss goals (e.g., specific styles like modern minimalism, vintage piping, or floral elegance).

    • Tour the workspace: showcase premium tools, ingredients, and pre-baked cake layers (to save time).

  • Customization: Participants choose their cake flavor (e.g., dark chocolate ganache, lemon curd, or salted caramel). {One per Program}

2. Foundation Techniques: Cake Prep & Structure (30 minutes)

  • Skills Taught:

    • Leveling, torting, and stacking cake layers for stability.

    • Make European Buttercream for Cake

    • Crumb coat & Fill with Swiss or French meringue buttercream.

    • Achieving sharp edges with an acrylic disk or bench scraper.

  • Upscale Twist: Use flavored soaking syrups (e.g., Simple syrups) for moisture and sophistication.

  • Skills Taught:

    • Smooth buttercream finishes with advanced tools (e.g., offset spatulas, turntables).

    • Piping techniques: rosettes, ruffles, or intricate borders using premium piping tips (e.g., French star tips).

  • Upscale Twist: Experiment with ombré or metallic finishes using edible luster dust.

  • Hands-On: Decorate the cake exterior with a chosen style, guided by the instructor.

  • Skills Taught:

    • Fondant Designs/Silicon Moulds

    • Creating 3D elements (e.g., flowers, bows, or geometric shapes) with fondant or gum paste.

  • Upscale Twist: Incorporate hand-painted details with edible food coloring or airbrush accents.

  • Hands-On: Craft personalized toppers or accents for the cake.

    • Applying edible gold/silver leaf, pearls, or crystals.
