​Day 1:  Baking Exceptional Cakes, Fillings, and Buttercreams

*Duration:  3 hours

*Focus:  Learn step by step to bake a classic cake recipe, including all the tips and techniques to make extraordinary cakes, prepare a distinct filling, explore best practices to make European, Russian, & American Buttercreams.

Schedule & Activities

1.  Introduction & Welcome (15 minutes)

  • Overview of MasterClass and goals: Baking, Filling, Assembling cakes with confidence

  • Choosing the right ingredients for perfect outcomes

2.  Baking an Exceptional Cake (1 hour)

  • Recipes: You will explore the basics of your cake flavor

  • Techniques:

  • Mixing Methods (best practices for soft outcomes)

  • Tips for perfect textures (e.g. avoiding overtaxing, proper oven temperature)

  • Baking secrets for your cake flavor

  • Hands-On:  Participants work on their own cake with coaching and support 

3.  Choosing and Making Your Fillings (45 minutes)

  • Techniques:

  • Step by step preparation for your filling

  • Best pairing with cakes (discussion) - taste testing

  • Consistency Tips - what to avoid

  • Hands-on:  Participants make their chosen fillings with coaching and support

4.  Buttercreams & Cake Assembly (45 minutes)

  • Comparing Buttercreams (pros & cons)

  • European Buttercreams

  • Swiss Meringue

  • Italian

  • French

  • Russian Buttercream

  • American Buttercream

  • Techniques

  • Preparing and handing each buttercream

  • Layering cakes with filling and stability

  • Basic Frosting (crumb coat, smooth finish)

5.  Q & A and Wrap-Up (10 minutes)

  • Address questions and troubleshoot issues

  • Preview Day 2:  Intricate deigns and florals

Day 2:  Intricate Cake Design and Decoration

Duration:  3 Hours

Focus:  Master advanced decorating techniques to create sophisticated, elegant floral designs and intricate details.

1.  Introduction to Cake Design (10 minutes)

  • Overview of creating intricate, elegant designs

  • Intro to tools, piping bags, tips, silicon moulds, gel colors

2.  Smoothing your Buttercream (30 minutes)

  • Discover Multiple Techniques

 

​3.  Piping Techniques for Florals and Details (1.5 hours)

  • Techniques

    • Buttercream Flowers: Practice Pipe roses, peonies, and leaves with petal tips

    • Borders: Create delicate edges 

    • Texturing:  Add depth with textured finishes

 

4.  Blending Colors for high end effects (30 minutes)

  • Design applications

  • Blending colors for high end effects

  • Hands-On:  Create beading & design elements and apply to cake

  • Tips and Tricks:

    • Achieving realistic shapes

    • Piping consistency for sharp details

    • Hands-On:  Practice piping on parchment

5.   Edible Decorations - Discusion (15 minutes)

  • Ideas for adding elegance to high end cakes

6.  Assembling the Masterpiece (30 minutes)

  • Techniques:

    • Arrange florals and details for balance and beauty

    • Polish the cake with final touches

    • Tips and Tricks

    • Fix common issues (e.g. cracking, drooping flowers, etc)

    • Showcase display your cakes - photos

    • Toast to Completion!

This exclusive, intimate class focuses on craftsmanship, creativity, and elegance. 

 

With only one or two participants, the instructor can provide tailored guidance, ensuring a bespoke experience. 

 

The course blends foundational skills with upscale techniques, using top-tier ingredients (e.g., Callebaut chocolate, Pure Ingredients, edible decorative elements, and professional tools (e.g., piping tips, silicone molds).

 

The final product will be a beautiful victorian design with intricate, decorated design--cake worthy of a high-end bakery display.

Time Frame:  3 Hours
