Crazy Good Lemon Curd

Pucker Up Buttercup! This is easy to make so there's never a need to buy it! It lasts up to 1 month in the fridge. (Freezer, a long time!).

1 T Lemon Zest

1 1/2 Cups of Sugar

1 Stick of Unsalted Butter

4 Egg Yolks

3/4 Cup Lemon Juice

Pinch of Salt

In saucepan, combine lemon juice, zest, sugar, eggs yolks, and butter. Cook over medium heat, whisking continuously until thick and first bubbles appear. (about 6 minutes). (optional: Strain through a sieve). Place in an air tight container and refrigerate up to one month.
